These eggless chocolate chip cookies taste EXACTLY like the traditional version! They come packed with crispy edges and soft & chewy interiors. Best of all: they're made using cold butter (no need to soften or melt it beforehand)!

how do these eggless cookies work?
You do NOT need eggs to make soft, chewy, and absolutely perfect chocolate chip cookies! These eggless chocolate chip cookies are seriously better than any store-bought cookies I've had and they're ALWAYS a huge hit with anyone who tastes them.
When you take eggs out of a classic chocolate chip cookie recipe, the dough is obviously losing liquid but it's also losing a significant structural element. Here are a few key recipe details that help ensure these cookies bake up perfectly thick, chewy, and the same as an egg version:
- Reverse creaming: This isn't a tradition method to use for making cookies, but it really is one of the secrets to a perfect eggless cookie! This technique is most commonly used to make cakes and involves mixing the butter into the dry ingredients (as opposed to regular creaming where the butter is mixed with sugar). This technique creates a cookie that spreads evenly, bakes up extra tender, and is just all around easier to make.
- Milk + cornstarch: One of my favorite egg substitutes to use in baking is a combination of milk and cornstarch. The milk replaces the lost liquid, while cornstarch helps thicken and set the cookies and ensures they hold their shape.
- Powdered sugar: When compared to granulated sugar, powdered sugar is finer and completely dissolves into the wet ingredients. Since we're skipping the traditional step of creaming together butter and sugar, this helps ensure the cookies don't feel gritty. Powdered sugar also has some cornstarch mixed into it, which again, helps with structure.
- Cool butter: One final touch that helps these cookies hold their perfect shape. Using cool butter and milk helps reduce the amount of spreading without needing to chill the cookie dough.

how to make eggless chocolate chip cookies
I mentioned above that the reverse creaming method makes this cookie recipe a lot easier and also fail-proof! As always, you can find the full ingredient measurements and recipe below, but here's a quick little breakdown of how these cookies are made:
- Whisk together both sugars, milk, and vanilla. Set aside while you prep the dry ingredients.
- Cut butter into dry ingredients. The butter pieces should be very fine and crumbly. Try your best to get them as small as possible. You can do this step with your fingers, a fork, or using a stand mixer fitted with the paddle attachment.

- Combine wet and dry ingredients. Pour the sugar mixture into the flour mixture. Stir together until you get a smooth cookie dough. There shouldn't be any visible clumps of butter. You may need give the dough some extra mixes to smoothen out the butter. The nice thing about using the reverse creaming method is the fact that the butter coats the gluten strands and helps protect it from overmixing. This keeps it tender and chewy even with the additional mixing involved!
- Fold in chocolate chips. Now the dough is ready for baking!

- Use a large cookie scoop to portion out balls of dough onto your baking sheet. The cookies will spread a little in the oven, so make sure to leave space between each one.
- Bake and cool. The cookies will puff up in the oven, but as they cool, they'll sink and create those classic crinkles and wrinkles on the surface! If the cookies misshaped in the oven, you can use a round cookie cutter or inverted cup to push in any wonky edges - you won't be able to reshape them once they've cooled so it's important to do this the second they come out of the oven while they're still soft and malleable.

make these cookies gluten free
If you want to make this chocolate chip cookie gluten-free, just swap the all purpose flour for gluten free flour. I always recommend measuring GF flour by weight as opposed to cups because it's denser than all-purpose flour and much easier to accidentally overmeasure.
make these cookies vegan
Although this recipe does not include eggs, it still uses cow milk, butter, and regular chocolate. If you wanted to make this chocolate chip cookie vegan, you could make the following substitutions:
• substitute the regular milk with a non-dairy alternative (coconut, almond, etc.)
• substitute the butter for vegan butter - use the type that's sold in sticks!
• substitute the chocolate chips/chunks for a vegan chocolate

storing eggless cookies
You can store these cookies for up to 2 weeks at room temperature in an airtight container. The less air they're exposed to, the longer they'll last! You can also keep the cookies in your fridge, but they will harden so I'd recommend bringing them back up to room temperature before serving.
If you find the cookies have lost some freshness, you can reheat them in the oven for a warm and gooey treat. Arrange the cookies on a parchment lined baking sheet and warm for 2-3 minutes at 350F or until softened to your liking.
how to freeze eggless chocolate chip cookies
You can freeze cookie dough balls and bake them off as needed when the cookie cravings hit! Scoop out portions of cookie dough onto a parchment lined baking sheet - they can be close together just don't let them touch. Freeze on the baking sheet for about 1 hour or until frozen solid. Take the dough balls off the baking sheet and arrange them in a large freezer bag in a single layer. Push out as much air as you can and seal before returning the bag to the freezer.
Frozen cookie dough will keep for 2 to 3 months in the freezer. When you want to bake them, take out however many portions you'd like to bake off and arrange them on a parchment lined baking sheet 3 inches apart. You can bake them frozen, just tag on an additional 1-2 minutes in the oven to account for thawing.

Eggless Chocolate Chip Cookies
- Total Time: 25 minutes
- Yield: 10 cookies (approx.)
Description
These eggless chocolate chip cookies taste EXACTLY like the traditional version! They come packed with crispy edges and soft & chewy interiors. Best of all: they're made using cold butter (no need to soften or melt it beforehand)!
Ingredients
- ½ cup (65g) powdered sugar
- ½ cup (100g) packed brown sugar, light or dark
- ¼ cup (60mL) whole milk, cool
- 1 teaspoon pure vanilla extract
- 1 ½ cups (195g) all-purpose flour, spooned and leveled
- 1 tablespoon cornstarch
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, cool
- 1 cup (170g) semi-sweet chocolate chips or chunks
Instructions
- Preheat your oven to 350°F. Line 2 large baking sheets with parchment paper and set aside.
- In a medium bowl or measuring cup, combine your powdered sugar, brown sugar, milk, and vanilla extract. Whisk to combine and set aside.
- In a separate large bowl, whisk together flour, cornstarch, baking soda, and salt.
- Add the butter to the dry mixture and mash together until you're left with VERY tiny pieces of butter (pictured above).
- Pour the wet ingredients in and stir until it comes together into a streak free cookie dough without any visible chunks of butter.
- Fold in chocolate chips or chunks. If the dough is too sticky to work with, pop it into the fridge for 20 to 30 minutes or until firm enough to handle.
- Using a large cookie scoop, portion out the dough into approximately 9 balls and drop the portions of dough onto the parchment lined baking sheets leaving at least 3 inches of space between each cookie.
- Bake the cookies in the center of a 350°F oven for 11 to 13 minutes or until puffed in the center and golden brown along the edges. The cookies will sink and crinkle as they cool.
- Cool the cookies for about 5 minutes on your baking sheet before transferring them onto a cooling rack to cool completely. Serve as is or topped with some sea salt flakes!
- Prep Time: 10 minutes
- Bake Time: 11 minutes

Chewy & yummy! I made these for the first time tonight. Differences I made: I weighed the flour instead of measuring, used 2Tbsp less powdered sugar, and used rice milk instead of cows’ milk. Also my oven runs hot so the first batch I baked off got a bit too hot, too fast. I also let the butter get soft and, after cutting with a pastry cutter, I mushed it into the flour with my fingers.
Even with those weirdnesses, I baked the dudes for 10mins in a mostly-350* oven and they’ve turned out gooey, chewy, soft, golden edges. They did come out flat though, so I recommend keeping the butter COLD and/or refrigerating your dough for an hour before baking. Thank you Mimi for this egg-free recipe that keeps all the important cookie aspects intact!

Oh my gosh thank YOU for your sweet comment!! I'm so glad you liked the cookies!!! ❤️🙂

I have made these 100 times and they are so good. The only problem I had was that cutting the butter takes forever.
This time I had someone shred the butter with a zester while I constantly stirred the flour mixture and they came out so much better. More even distribution of butter = softer cookies throughout. Thank you so much for this recipe!
Mimi says
Ohhhhhh I love the zester idea!! I'm definitely trying that. I'm so happy you liked the recipe! 🙂
Julie says
Why does the recipe call for butter, when it states no butter or eggs are used in the beginning of recipe?
Mimi says
Hey Julie! Sorry if the description is a bit poorly worded! I meant this is an eggless recipe and there's no need to soften or melt butter (i.e. you can use cold butter unlike a classic chocolate chip cookie recipe). I'll work on coming up with better wording and fix it!

This recipe is a blessing! I love how they turned out and the best part is its egg free!
I personally love salted butter and skipped on the salt.
This is my go to recipe for cookies now!
