Comfort food at its finest, this quick and healthy red pepper tomato soup is packed with flavor and antioxidants, and is ready in 30 minutes! The perfect blend of sweet, peppery, and sour.

Tomato soup is the epitome of comfort food for me! And while basic tomato soup is amazing, why not bump things up a notch and add some red pepper?
What I especially love about tomato soup is that you don’t have to worry about how you dice your vegetables. You blend everything up in the end, so you can chop as you please! Just keep in mind that larger pieces of vegetables will take longer to cook.
Red pepper tomato soup ingredients:
For this soup, you will need:
• olive oil: to cook the vegetables and add flavor!
• red onion and garlic: two traditional flavorings for any classic tomato soup recipe
• red pepper: not super classic, but a nice addition to give your soup another layer of flavor! Plus, red pepper + fall = perfection!
• salt and dried basil & oregano: for seasoning
• tomatoes: you can use fresh or canned tomatoes. If using canned, make sure you pick out a brand you know and love because this is the heart of your soup!
• water: to help give your soup the right consistency. You can add more if you like a looser soup or less if you like a thicker tomato soup
Red pepper tomato soup tips:
• The longer you simmer your soup, the better the flavor! If you have the time, simmering for an extra 20 to 30 minutes helps the soup develop an even better flavor
• Don’t worry about how you chop your veggies. Just make sure they’re all a similar size to help them cook at around the same time
• For added flavor, use roasted red peppers!
• For added kick, add a pinch of red pepper flakes for some heat!
• Use good quality tomatoes because we’re going to be using a lot! If the flavor of the tomatoes isn’t great, your soup will have an off taste
• If blending your soup in a blender, make sure to do it in batches and avoid filling the blender up more than halfway full (to avoid spills)! Puree with the center insert removed to allow the steam to escape
How to store tomato soup:
Once fully cooled to room temperature, transfer your soup to an airtight container and cover. Tomato soup will keep in the fridge for up to 1 week.
To reheat, transfer the soup to a pot and warm on medium low heat until hot again. If the soup is too thick, add a splash of water to thin it out.
How to freeze tomato soup:
To freeze tomato soup, cool the soup completely to room temperature, and transfer to an airtight, freezer-safe container and cover. To make defrosting easier later on, you can also transfer your soup to a freezer bag and seal. Freeze for up to 3 months.
To defrost, if you froze your soup in a container, let the soup sit out at room temperature for an hour or until it defrosts enough for it to come out of the container. Some frozen parts are fine.
Transfer to a pot and reheat on low. If stored in a freezer bag, simply open the bag and transfer the frozen soup to a pot. Heat on low until defrosted and warmed.

Red Pepper Tomato Soup Recipe
- 2 tablespoons extra-virgin olive oil
- 1 large red onion, roughly chopped
- 1 large red bell pepper, seeds/stem removed and roughly chopped
- 2 heads garlic (about 15 cloves), roughly sliced
- 1/2 teaspoon salt, plus more to taste
- 1 & 1/2 teaspoons dried oregano
- 1 teaspoon dried basil
- 3 pounds Roma tomatoes, peeled and roughly chopped * see notes
- 1/2 cup water, or more to reach your desired consistency
- In a large sauce pot, combine olive oil, red onion, red bell pepper, garlic, and salt. Place over medium heat, and cook the vegetables for about 5 minutes, or until the onion is translucent and everything is softened. Add in your oregano and basil, and cook for another minute or so to toast the herbs.
- Add your chopped tomatoes and water to the pot. Raise your heat to high and bring everything up to a boil. Reduce heat to medium, and simmer for about 10 to 15 minutes to soften the tomatoes. Puree your cooked mixture using an immersion blender or regular stand blender. ** see notes
- Return your blended soup to your pot, and place over high heat. Bring to a boil, then reduce heat to low. Cover the pot (leaving it slightly ajar) and simmer your soup until reduced to your preferred thickness. Taste and season with salt if needed.
