Servings: 2 people

  • 2 cups ice cubes
  • 1 cup strongly brewed coffee, chilled in the fridge * see notes
  • 3/4 cup your choice of dairy or dairy substitute, I used half and half, but you can use regular, almond, or soy milk, etc.
  • 3 tablespoons maple syrup, or your preferred sweetener
  • 1/4 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • whipped cream (optional, for topping)

  • In a large blender, combine all of your ingredients together. Blend until smooth. Serve plain or top with whipped cream and more pumpkin spice!

* It's important to chill your coffee in the fridge for a few hours beforehand so it doesn't melt the ice. I like to chill my coffee overnight, but it should be chilled for a minimum of 4 hours, or until very cold!
When it comes to the type of coffee, I used espresso, but you can use decaf, Columbian, Arabica, or whatever other brew you like!
